I’d made my Chocolate Sheet Cake, omitting the pecans in the icing, which results in a perfect, smooth, chocolaty cake that’s pretty much irresistible…so we ate our meal in reverse order. To make matters worse, I let everyone dig into the birthday cake before dinner. I guess I was afraid I wouldn’t have enough. I’m not sure what, if anything at all, I was thinking. Problem is, the only people in attendance were my immediately family-MM, the kids, and me-and Pesky Tim and his family. I cooked thirty ears of corn for my five-year-old’s birthday party. I usually never set out to make corn fritters-it’s almost always an afterthought following an overzealous session of cooking corn-on-the-cob. Corn fritters are made with flour rather than cornmeal and are lighter and puffier. They're similar, but different! Hushpuppies are basically balls of fried cornbread, so they have a heavier, denser texture. I use fresh corn when I can, but frozen and canned corn work just fine too.Īre hushpuppies and corn fritters the same thing? Use whatever type of corn you have-fresh, frozen, or canned. Any cooler and they could absorb too much oil and not get crispy. Any hotter and the fritters might burn before they're done in the middle. Make sure your frying oil is the right temperature-365 degrees is the sweet spot. The combination tastes like a beignet, but better. Or, for a really special treat, sprinkle them generously with sifted powdered sugar! You’ll just have to trust me on this. They’re delightfully yummy! You can serve these in a big basket as a munchie or appetizer, or make them as an accompaniment to grilled hamburgers or a big fish fry. I never set out to make corn fritters. It's almost always an afterthought following an overzealous session of cooking corn on the cob. There are plenty of ways to use up leftover corn, but none quite as tasty as this. Who can pass up a fried ball of dough, especially one studded with corn, anyway? I for one cannot, so I’m always glad when I make them.
